Tofu Stir Fry with Fried Rice
Ingredients
3 tbsp Sesame Oil, divided
1 pkg. Firm Tofu, cut into ½” cubes (pre marinated for 10 minutes in ½ tsp chilli flakes, 1/4 cup soy sauce and 2 tbsp rice wine vinegar)
½ cup white button mushrooms, quartered
½ cup bean sprouts
½ cup grated carrot
½ cup bok choy, julienned
½ yellow pepper, sliced
3 scallions, sliced
2 tbsp Soy Sauce
3 tsp Oyster Sauce
2 eggs, lightly beaten
2 cups short grained rice (Pre cooked)
Method
Place wok over medium heat. Add 2 tbsp sesame oil once hot add marinated tofu and cook for 2 minutes, then add mushrooms, bean sprouts, carrots, bok choy, yellow pepper and scallions. Stir fry vegetables quickly then add the soy sauce and oyster sauce. Stir well. Within 5 minutes stir fry should be cooked. Once satisfied with texture place mixture on a serving plate. In the same wok add the remaining tbsp of oil and add the lightly beaten eggs. Scramble your eggs then add the pre-cooked rice. Stir and fry. Serve with tofu vegetable mixture.
For tofu marninade
Cut tofu into ½ cubes. In a bowl add tofu, chili flakes, soy sauce and rice wine vinegar. Stir making sure tofu is covered. Let sit for 10 minutes.
